Porfidio – Plata
History
Porfidio was established in 1991 in Jalisco by Martin Grassl. Born in 1967 in Austria, Grassl grew up spending his summer holidays working at his aunt’s eaux-de-vie distillery. After embarking on a career with an Austrian drinks company, he was sent to Mexico at age 24 to learn about marketing tequila. It didn’t take him long to realise there was a gap in the market and Porfidio was born.
Distilled from the highest quality blue Agave within the State of Jalisco, Porfidio is unique in its positioning: it is not merely tequila, but a super-premium spirit with a range of specialist brands produced in limited quantities. Undiscovered by the general public, Porfidio’s unique bottles have obtained cult status amongst tequila collectors and aficionados.
Tasting Notes
A truly exceptional white rum created from pure cane juice. The spirit is triple distilled and then bottled immediately to preserve its purity.
Porfidio Rum is made from 100% pure cane juice. The harvest takes place annually between December and May.
The sugar cane is cut by hand with a machete and reduced to 50 cm lengths. The cane is then very slowly pressed to extract the juice. Only 30% of the cane is juice the rest is the fibre which is used to feed the local cows! The juice is then fermented for 4 days and the result is a cane “wine” which is approximately 8% abv. The “wine” is then triple-distilled (30 to 40 kg of fresh sugar is used to make 1 litre). The “Plata” rum is bottled just after distillation to keep the purity of the product. The anejo rum is made from a small quantity and is aged for 5 years in 200 litres new American oak barrels. The anejo is the product of a single barrel.
